Conference - Dinner at the Lycée hôtelier Paul Augier in Nice
On Friday November 18, at the Lycée Hôtelier Paul Augier in Nice, I had the pleasure of highlighting an often overlooked aspect of Auguste Escoffier, his humanist and European commitment.

Followed by a large audience, interspersed with anecdotes distilled by Richard Duvauchelle, Curator of the Escoffier Museum of Culinary Art in Villeneuve-Loubet, this conference was held as part of the closing of the DéfiTour, organized by DefisMed and its President Eric Raulet, in partnership with the Escoffier Foundation and the Lycée Hôtelier Paul Augier.

The principal of the Lycée Denis Férault and its deputy director of training Christophe Moreau then welcomed the participants to the application restaurant La Rotonde for an exceptional meal.
As a preamble, a check for 1,500 euros was presented by Richard Duvauchelle to the association Vacances & Familles (U.N.A.T)*.

The hundred participants had the opportunity to appreciate the cuisine of Auguste Escoffier with a menu signed by Jean-Claude Brugel, Meilleur Ouvrier de France 1996, President of the Disciples Escoffier of the Riviera - Côte d'Azur - Corsica - Monaco and produced in collaboration with the students and cooking teachers of the Lycée hôtelier.
